Roasted Vegetable With Sausage Pesto Pizza

INGREDIENTS

  • 1 serving of pizza dough

  • 8 cherry tomatoes

  • 1 heriloom tomato

  • 1 red onion

  • 1/3 cup cooked sausage

  • 1/2 cup pesto, plus 1 tablespoon for topping

  • 3/4 cups mozzarella cheese

  • cornmeal

  • red pepper flakes

  • salt

  • peppe5

INSTRUCTIONS

  1. Preheat oven to 450F

  2. Arrange or roll out pizza dough onto a floured surface

  3. Sprinkle pizza stone or baking sheet AND pizza dough with cornmeal

  4. Transfer dough onto baking dish of choice

  5. Spread pesto in an even layer over the dough

  6. Generously place the mozzarella cheese over the pesto, covering completely

  7. Top with whole cherry tomatoes

  8. Thinly slice the heirloom tomato and red onion and place next to the cherry tomatoes

  9. Crumble up the cooked sausage in any empty spots

  10. Sprinkle entire pizza with salt, pepper and red pepper flakes

  11. Bake for 15-20 minutes or until cheese is browned and bubbly

  12. Remove from oven and dollop 1 tablespoon of pesto onto the pizza

  13. Serve hot on the pizza stone

  1. Drizzle with olive oil and lemon juice then season with salt and pepper

  2. Bake for 30-35 minutes or until the tomatoes are roasted and soft

  3. Remove from oven

  4. Discard the thyme and rosemary

  5. Add roasted vegetables, fresh basil and vegetable stock into a blender or food processor

  6. Blend for 30 seconds or until the consistency is creamy and smooth

  7. Serve immediately into large bowls

OPTIONAL:

  • Add toppings of you choice… Parmesan cheese, mozzarella cheese, croutons, fresh basil, etc.
