Chipotle Lime Salmon With Pineapple Avocado Salsa
INGREDIENTS
FOR THE PINEAPPLE AVOCADO SALSA :
1 1/2 cup pineapple
2 avocados
3 roma tomatoes
1 jalapeño
1/2 cup cilantro
1/3 cup lime juice
FOR THE CHIPOTLE LIME SALMON :
2-4 salmon fillets
3/4 teaspoon chipotle chile powder
1 teaspoon cumin
3 tablespoon lime juice
1 teaspoon garlic, minced
2 tablespoon cilantro
INSTRUCTIONS
Pre heat oven to 400°F
Cube the avocado, pineapple, roma tomatoes and jalapeño
Place into medium size bowl and add the lime juice and cilantro. Stir
Refrigerate salsa for 25-30 minutes
Line a baking sheet with parchment paper or foil and olive oil the bottom
Place salmon onto prepared pan and squirt the lime juice over the entire fillet. Rub down with minced garlic
Season with chipotle powder and cumin
Bake for 20-22 minutes or until flakey
Plate the salmon and spoon the salsa on top
Sprinkle more lime juice and cilantro
Serve immediately
