Build Your Own (Fish) Tacos

INGREDIENTS

  • 1.5 to 2 pounds of fish or meat of your choosing

  • 1 head romaine lettuce

  • 6 roma tomatoes

  • 1 red onion

  • 1 cup cojita cheese

  • 1 cup cabbage slaw

  • 1 avocado, creamed

  • 1/4 cup sour cream

  • 1 cup mango salsa (see recipe)

  • 1/2 cup classic salsa (see recipe)

  • 1 jalapeño

  • lime

  • cilantro

  • tortillas

  • cumin

INSTRUCTIONS

  1. Cook the fish to meat of choice accordingly. Serve

  2. Make the mango salsa ;

    Dice fresh mango. Dice 2 roma tomatoes. Dice a quarter of a red onion. Dice half a jalapeño. Juice from a lime. Add all ingredients into small bowl. Stir. Add cilantro to your liking. Serve

  3. Make the classic salsa ;

    Dice 3 roma tomatoes. Dice a quarter of a red onion. Dice half a jalapeño. Juice from a lime. Add all ingredients into small bowl. Stir. Add cilantro to your liking. Serve

  4. In a blender, add one avocado and sour cream. Blend until smooth. Serve in small bowl

  5. Season slaw with cumin, cilantro and lime juice. Serve in small bowl

  6. Crumble cojita cheese into a small bowl. Serve

  7. Cube up any leftover onion and tomato. Serve

  8. Heat grill pan on high heat

  9. Once hot, brown tortillas. Serve

  10. Build and assemble tacos as you please
