Build Your Own (Fish) Tacos
INGREDIENTS
1.5 to 2 pounds of fish or meat of your choosing
1 head romaine lettuce
6 roma tomatoes
1 red onion
1 cup cojita cheese
1 cup cabbage slaw
1 avocado, creamed
1/4 cup sour cream
1 cup mango salsa (see recipe)
1/2 cup classic salsa (see recipe)
1 jalapeño
lime
cilantro
tortillas
cumin
INSTRUCTIONS
Cook the fish to meat of choice accordingly. Serve
Make the mango salsa ;
Dice fresh mango. Dice 2 roma tomatoes. Dice a quarter of a red onion. Dice half a jalapeño. Juice from a lime. Add all ingredients into small bowl. Stir. Add cilantro to your liking. Serve
Make the classic salsa ;
Dice 3 roma tomatoes. Dice a quarter of a red onion. Dice half a jalapeño. Juice from a lime. Add all ingredients into small bowl. Stir. Add cilantro to your liking. Serve
In a blender, add one avocado and sour cream. Blend until smooth. Serve in small bowl
Season slaw with cumin, cilantro and lime juice. Serve in small bowl
Crumble cojita cheese into a small bowl. Serve
Cube up any leftover onion and tomato. Serve
Heat grill pan on high heat
Once hot, brown tortillas. Serve
Build and assemble tacos as you please
