Oven Baked Walleye With Crunchy Green Salad

INGREDIENTS

  • 1 whole walleye fillet

  • 3 cups romaine lettuce

  • 1 cup sugar snap peas

  • 1 cucumber

  • 1/3 cups celery

  • 1/2 red onion

  • 2 radishes

  • 2 lemons

  • feta or blue cheese

  • fresh parsley

  • paprika

  • garlic powder

  • onion powder

  • salt

  • pepper

INSTRUCTIONS

  1. Pre heat oven to 400 degrees

  2. Line baking sheet with foil or parchment paper

  3. Drizzle olive oil over lined baking sheet

  4. Place walleye fillet on the olive oil

  5. Season with chopped parsely, paprika, onion powder, garlic powder, salt and pepper

  6. Top the walleye with a few slices of lemon

  7. Bake for 15 minutes or until white and flaky

  8. While fish bakes, chop romaine. Add to serving platter or bowl

  9. Slice radish, cucumber, 1/2 red onion and 1/3 cup celery. Add to serving dish

  10. Squirt the juice from an entire lemon over serving dish. Season with pepper

  11. Preheat small skillet on medium, once heated add a drip of olive oil and sugar snap peas

  12. Cook for 5 minutes, shaking pan occasionally.

  13. Set aside to cool

  14. Crumble cheese over the salad

  15. Add the peas, fresh parsley salt and pepper to the salad

  16. Plate the fish and charred lemons

  17. Serve immediately
