Chicken Noodle Soup

Total Time: 1+ hour

INGREDIENTS

  • 2 pounds chicken breasts

  • 4 cups noodle of your choice

  • 2 cups carrots

  • 2 cups celery

  • 2 cups onion

  • 2 cloves garlic

  • 1 lemon

  • 8 cups chicken stock or broth

  • 4 fresh sprigs thyme

  • 2 bay leaves

  • fresh parsley

  • salt

  • pepper

INSTRUCTIONS

  1.  In a large pot, combine olive oil, onion, carrots, celery and garlic

  2. Cook over medium heat until vegetables are soft and translucent. About 5-7 minutes

  3. Once cooked, add chicken stock/broth and juice from 1 lemon to the pot

  4. Turn heat up to medium high and bring to a low boil

  5. Add chicken breasts, thyme, bay leaves, parsley, salt and pepper

  6. Reduce heat slightly and simmer for 35-40 minutes

  7. Discard bay leaves and thyme stems

  8. Remove chicken from pot and shred with a fork

  9. While shredding, bring the pot back to a boil

  10. Add noodles and chicken

  11. Boil for 10-15 minutes or until noodles are cooked

  12. Serve immediately
