Chicken Noodle Soup
INGREDIENTS
2 pounds chicken breasts
4 cups noodle of your choice
2 cups carrots
2 cups celery
2 cups onion
2 cloves garlic
1 lemon
8 cups chicken stock or broth
4 fresh sprigs thyme
2 bay leaves
fresh parsley
salt
pepper
INSTRUCTIONS
In a large pot, combine olive oil, onion, carrots, celery and garlic
Cook over medium heat until vegetables are soft and translucent. About 5-7 minutes
Once cooked, add chicken stock/broth and juice from 1 lemon to the pot
Turn heat up to medium high and bring to a low boil
Add chicken breasts, thyme, bay leaves, parsley, salt and pepper
Reduce heat slightly and simmer for 35-40 minutes
Discard bay leaves and thyme stems
Remove chicken from pot and shred with a fork
While shredding, bring the pot back to a boil
Add noodles and chicken
Boil for 10-15 minutes or until noodles are cooked
Serve immediately
