Avocado Toast With Eggs

Total Time: 30 minutes

INGREDIENTS

FOR THE AVOCADO TOAST :

  • 2 avocado

  • 6 cherry tomatoes

  • 1/2 red onion

  • 2-4 slices of sourdough bread

  • lime

  • onion powder

  • garlic powder

  • salt

  • pepper

  • ** OPTIONAL seasoning of your choice, paprika, everything but the bagel, red pepper flakes, flakey sea salt, fresh basil, olive oil, honey, etc.

FOR THE POACHED EGG :

  • 2 eggs

  • 4 tablespoons white vinegar

FOR THE SOFT BOILED EGG :

  • 2 eggs

INSTRUCTIONS

FOR THE AVOCADO TOAST :

  1. To your liking, toast your sourdough bread using a grill pan, toaster oven or toaster. If using the grill pan or toaster oven, lightly brush the bread with olive oil BEFORE toasting. If using the toaster, lightly brush bread with olive oil AFTER toasting.

  2. In a small bowl, cube up your avocado and cherry tomatoes

  3. Add a squirt of lime

  4. Season with salt, pepper, garlic powder, onion powder and a light drizzle of olive oil

  5. Smash! To desired consistency

  6. Scoop avocado smash onto the toasted bread

  7. Add any additional toppings of your choice

  8. Serve immediately

    FOR THE POACHED EGG :

  1. Bring a large pot of water to a boil, then reduce the heat to low

  2. Crack an egg into a small fine mesh sieve over a bowl

  3. Gently jiggle the egg in the sieve until all the runny egg whites have been removed

  4. Very gently the egg from the mesh sieve in a small bowl

  5. Stir vigorously the vinegar into the water to create a vortex

  6. While water is still in a swirling vortex, add the egg to the middle of the vortex

  7. Cook for 3 minutes

  8. With a large slotted spoon, remove the egg and dab it on a paper towel to remove any excess water

  9. Serve immediately

FOR THE SOFT BOILED EGG :

  1. In a medium sized sauce pot, add water and bring to a boil over high heat

  2. Once boiling, add eggs

  3. Let the water and egg continue to boil for exactly six minutes

  4. After six minutes, remove the egg from the pot and place them in an ice water bath or run under cool water until they are cool enough to peel

  5. Serve immediately

COOKING TIPS:

  • 6 minutes: liquid yolk with fully set whites

  • 7 minutes: jammy yolk with outer edges set

  • 8-9 minutes: half set yolk

  • 10 minutes: fully set yolk
