Salted Honey Butter Sweet Rolls

INGREDIENTS  

FOR THE DOUGH :

  • 5 cups flour

  • 1 1/4 cups whole milk

  • 2 3/4 teaspoon instant yeast

  • eggs

  • 12 tablespoons butter

  • 3 tablespoons white sugar

  • 2 teaspoon salt


FOR THE HONEY BUTTER TOPPING :

  • 1/2 cup melted butter

  • 1/3 cup honey

  • flakey sea salt

INSTRUCTIONS

  1. In the bowl of a stand mixer fitted with a dough hook, mix together the flour, yeast, and salt

  2. In a medium bowl, lightly beat the eggs, set aside.

  3. In a medium saucepan, combine the milk, 9 tablespoons of butter and the sugar

  4. Cook over medium-low heat until the butter melts and the sugar dissolves

  5. With the mixer on low, slowly add milk and sugar mixture to bowl followed by the eggs. Mix until no dry flour remains, about 1 - 2 minutes

  6. On medium speed, knead until dough is smooth and pulls away from the sides of the bowl. About 6 - 8 minutes.

  7. Lightly grease large glass bowl with vegetable oil

  8. Work the dough into a tight ball and transfer to the greased bowl

  9. Cover the bowl with plastic wrap

  10. Let rise in a warm, draft free area until doubled in size, about 60 - 90 minutes

  11. Line a 13X9 baking pan with parchment paper and lightly grease with butter

  12. Melt remaining 3 tablespoons of butter

  13. Gently remove the ball of dough onto a clean lightly floured surface and divide the dough in half

  14. Stretch each half into a 24 inch long roll

  15. Once 24 inches long, use a rolling pin to make in 5 inches wide

  16. Then brush the surface with 1 tablespoon of melted butter

  17. Starting at the top of the roll, pull 1/3 of the dough roll down towards you

  18. Then fold the bottom 1/3 of the dough over the top fold

  19. Roll the dough a couple times to seal the edges

  20. Using a sharp knife, cut the dough log into 12 equal pieces

  21. Arrange rolls seam side down in the prepared pan in three rows of four

  22. Repeat steps 14 through 21 with the remaining other half of dough

  23. Cover the pan with plastic wrap and let the rolls proof in a warm place until they are double in size, about 60 minutes

  24. Preheat the oven to 375°F

  25. Bake the rolls 30-35 minutes or until brown

  26. Transfer the rolls to a cooling rack

  27. Melt 1/2 cup butter

  28. Once melted, stir in 1/3 cup honey

  29. Brush with the rolls with melted honey butter mix

  30. Sprinkle with flaky sea salt

  31. Serve warm or at room temperature
