Sunny Side Up Focaccia Breakfast Sandwich
INGREDIENTS
4 squares of focaccia bread
1 heirloom tomato
1 red onion
1/3 cup grated parmesan cheese
2 eggs
salt
pepper
fresh basil
olive oil
INSTRUCTIONS
From a square of focaccia bread, cut into quarters then split them open. Makes 4 tops and 4 bottoms
Lightly toast on a grill pan or toaster
Divide 1/3 cup of fresh grated Parmesan cheese between the 4 bottoms
Thinly slice up your heirloom tomato and red onion. Layer on top of the cheese
With olive oil, grease large skillet and set to medium heat
Once hot, crack eggs directly into the skillet
Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, about 3-4 minutes
Slide gently onto the bottom portion of the bread
Season with salt and pepper and fresh basil
Squish down with the top half of the bread
Enjoy immediately
