Sunny Side Up Focaccia Breakfast Sandwich

INGREDIENTS

  • 4 squares of focaccia bread

  • 1 heirloom tomato

  • 1 red onion

  • 1/3 cup grated parmesan cheese

  • 2 eggs

  • salt

  • pepper

  • fresh basil

  • olive oil

INSTRUCTIONS

  1. From a square of focaccia bread, cut into quarters then split them open. Makes 4 tops and 4 bottoms

  2. Lightly toast on a grill pan or toaster

  3. Divide 1/3 cup of fresh grated Parmesan cheese between the 4 bottoms

  4. Thinly slice up your heirloom tomato and red onion. Layer on top of the cheese

  5. With olive oil, grease large skillet and set to medium heat

  6. Once hot, crack eggs directly into the skillet

  7. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, about 3-4 minutes

  8. Slide gently onto the bottom portion of the bread

  9. Season with salt and pepper and fresh basil

  10. Squish down with the top half of the bread

  11. Enjoy immediately
