White Chocolate Oatmeal Cookie

Prep Time: 20 minutes. Cook Time: 10+ minutes Total Time: 30+ minutes

INGREDIENTS

  • 1 cup butter

  • 1 cup flour

  • 3/4 cup cake flour

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 2 eggs

  • 2.5 cups old fashioned oats

  • 1 teaspoon baking soda

  • 1/4 teaspoon cornstarch

  • 1 teaspoon vanilla

  • 1 tablespoon cinnamon

  • 1 teaspoon salt

  • Any mix ins you please… white chocolate chips, cranberries, raisins, semi-sweet chocolate chips, toffee bits etc.

INSTRUCTIONS

  1. Preheat your oven to 350°F

  2. In medium size bowl, whisk together flour, cinnamon, baking soda, cornstarch and salt. Set aside

  3. In the bowl of a stand mixer, beat the butter until smooth, about 1 minute

  4. Add both sugars and beat on medium speed until well creamed, about 2-3 minutes

  5. Add eggs one at a time, mixing until just combined

  6. Add vanilla

  7. Slowly add the flour mixture into the bowl with mixer on low speed

  8. Mix until combined

  9. With mixer still on low, add oatmeal and any add ins

  10. Cover and chill dough for no less then one hour and no more then 24 hours

  11. When ready line baking sheet with parchment paper

  12. Bake cookies for 9-11 minutes or until sides are lightly browned and crisp

  13. Centers will look slightly undone, leave to set and cool on baking sheet for 5 minutes

  14. Transfer to cooling rack
