White Chocolate Oatmeal Cookie
Prep Time: 20 minutes. Cook Time: 10+ minutes Total Time: 30+ minutes
INGREDIENTS
1 cup butter
1 cup flour
3/4 cup cake flour
1 cup brown sugar
1/2 cup white sugar
2 eggs
2.5 cups old fashioned oats
1 teaspoon baking soda
1/4 teaspoon cornstarch
1 teaspoon vanilla
1 tablespoon cinnamon
1 teaspoon salt
Any mix ins you please… white chocolate chips, cranberries, raisins, semi-sweet chocolate chips, toffee bits etc.
INSTRUCTIONS
Preheat your oven to 350°F
In medium size bowl, whisk together flour, cinnamon, baking soda, cornstarch and salt. Set aside
In the bowl of a stand mixer, beat the butter until smooth, about 1 minute
Add both sugars and beat on medium speed until well creamed, about 2-3 minutes
Add eggs one at a time, mixing until just combined
Add vanilla
Slowly add the flour mixture into the bowl with mixer on low speed
Mix until combined
With mixer still on low, add oatmeal and any add ins
Cover and chill dough for no less then one hour and no more then 24 hours
When ready line baking sheet with parchment paper
Bake cookies for 9-11 minutes or until sides are lightly browned and crisp
Centers will look slightly undone, leave to set and cool on baking sheet for 5 minutes
Transfer to cooling rack
