Summer Chilled Pasta Salad With Lemon Vinaigrette
INGREDIENTS
FOR THE PASTA SALAD :
3 cups pasta of your choice
3/4 cup zucchini
1 cup yellow squash
1/2 cup cherry tomaotos
2 cups corn
2.5 cups red pepper
1 teaspoon red onion
1/4 teaspoon basil
1 cup cheese of choice… Parmesan, mozzarella, goat, asiago, etc.
FOR THE LEMON VINAIGRETTE :
1/3 cup olive oil
3 tablespoon lemon juice
3 tablespoon honey
1 tablespoon dijohn mustard
salt
pepper
INSTRUCTIONS:
In large pot, boil salted wate, add pasta and cook accordingly
Drain and rinse with cold water, place in large serving bowl and set aside
Place a pan on high heat, add corn and char for 5 minutes. Remove from heat and set aside
in the bowl with the cooked pasta, add chopped basil, onion, peppers, yellow squash, tomatoes, zucchini and charred corn
Combine all the ingredients for the lemon vinaigrette into the serving bowl
With a large slotted spoon, stir for 2 minutes
Top with more salt and pepper
Add cheese of choice
Store in refrigerator for 3-5 hours
Before serving, stir for another couple minutes
Sprinkle more cheese and fresh basil
Serve chilled
