Chocolate Cupcakes With Peanut Butter Frosting

INGREDIENTS

  • 1/2 cup cocoa powder

  • 3/4 cups flour

  • 1/2 cups white sugar

  • 1/2 cups brown sugar

  • 2 eggs

  • 1/3 cup vegetable oil

  • 1/2 cup buttermilk

  • 1/2 teaspoon baking soda

  • 3/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon vanilla

FOR THE FROSTING :

  • 1 cups butter

  • 5 cups powdered sugar

  • 1 cup peanut butter

  • 1/4 cup whole milk or heavy cream

  • 1 tablespoon vanilla

INSTRUCTIONS

FOR THE CUPCAKES :

  1. Preheat your oven to 350°F

  2. Line 12 cup muffin pan with cupcake liners

  3. In medium bowl, whisk together flour, cocoa powder, baking soda, baking powder and salt. Set aside

  4. In mixing bowl, on low speed, mix both eggs, brown sugar, white sugar, oil and vanilla until combined

  5. Add half of the buttermilk and half of the flour mixture into the mixing bowl of wet ingredients and mix on low

  6. Repeat with the remaining other halves of buttermilk and flour mixture. Mix until just combined

  7. Fill liners just over halfway with batter

  8. Bake for 20 minutes or until toothpick comes out clean

  9. Cool completely in muffin pan

    FOR THE FROSTING :

  1. Whip together butter, peanut butter and vanilla

  2. Slowly add powdered sugar one cup at a time

  3. Gently add milk or heavy cream as needed until desired consistency
