Chicken Parmesan

INGREDIENTS

FOR THE TOMATO SAUCE :

  • 2 cans of 14oz petite diced tomatoes

  • 2 cans of 15oz tomato sauce

  • 1 yellow onion

  • 3 cloves garlic

  • 2 teaspoons dried oregano

  • 1 teaspoon garlic powder

  • 1 teaspoon dried basil

  • 1 teaspoon dried rosemary

  • 3 tablespoons fresh basil

  • salt

  • pepper

FOR THE CHICKEN PARMESAN & EGG WASH :

  • 4 large chicken breasts, sliced in half

  • 3 eggs

  • 3/4 cup buttermilk

  • 1/2 teaspoon garlic powder

  • 1/2 cup parmesan cheese

  • 3/4 cup mozzarella cheese

  • salt

  • pepper

FOR THE FLOUR DREDGE :

  • 1/3 cup cornstarch

  • 1 cup flour

  • 1/2 teaspoon pepper

  • 2 teaspoons dried oregano

  • 1/2 teaspoon garlic powder

FOR THE BREADING :

  • 5 cups homemade croutons (see previous recipe)

  • 1 teaspoons dried oregano

  • 1 teaspoon dried basil

  • 1 teaspoon dried rosemary

INSTRUCTIONS

Make the sauce:

In a large pot, on medium heat, add tomato sauce, diced tomatoes, cubed onion and garlic. Sprinkle in salt, pepper, garlic powder, dried oregano, basil and rosemary. Simmer for about 35-40 minutes. Emulsify, set aside

Make the breadcrumbs:

Combine homemade croutons and the dried oregano, basil and rosemary into a food processor. Pulse into crumbs

Prepare the dreading station:

In one bowl add flour, cornstarch, pepper, oregano and garlic powder. In second bowl, add the breadcrumbs

Prepare the chicken:

Using a sharp knife, slice each chicken breast in half, to create a thin cutlet.

  1. In a small bowl, combine garlic powder, salt and pepper. Sprinkle it over the chicken

  2. In a large bowl, whisk together the eggs and buttermilk

  3. Add all the chicken cutlets to the egg mixture. Let marinate for about 30 minutes

Bread the chicken:

The basic order is egg, flour, egg, breadcrumb

  1. Grab one piece of chicken from the egg mix and let the excess egg drip off. Dip the chicken into the bowl with the flour and flip it 3 times to make sure it is evenly coated

  2. Dip the same floured chicken back into the egg mix and coat again Lift it out to drip

  3. Then flip the chicken to the bowl of bread crumbs

  4. Press the breadcrumbs into the chicken to coat well

  5. Repeat steps 1-4 with the remaining chicken

Cook the chicken:

  1. Pre heat large skillet on medium high heat

  2. Once all cutlets have been breaded, add to the pre heated skillet and cook for 6 minutes per side or until chicken is crispy

  3. Pre heat oven to broiler mode

  4. Transfer chicken to an oven safe dish or baking sheet

  5. Top each piece of chicken with slice of mozzarella cheese

  6. Spoon a generous dollop of tomato sauce over the cheese

  7. On top of the sauced chicken, add a sprinkle more of mozzarella and parmesan cheese

  8. Once all cutlets have been sauced, place into the oven

  9. Broil for 3-5 minutes or the cheese is browned and bubbly

  10. Remove from the oven and top with fresh basil

  11. Serve immediately
