Blood Orange And Lemon Baked Cod

Total Time: 30 minutes

INGREDIENTS

  • 2-4 cod fillets

  • 3 blood oranges or regular orange

  • 2 lemons

  • 4 fresh rosemary sprigs

  • 4 fresh thyme sprigs

  • salt

  • pepper

  • olive oil

INSTRUCTIONS

  1. Preheat oven to 400°F

  2. Slice the blood oranges and lemons 1/4 inch thick. Remove any seeds

  3. Arrange the slices in the middle of parchment paper baking sheet

  4. If needed, overlap them so they are the size of your cod fillet

  5. Top the citrus with fresh sprigs of thyme and rosemary

  6. Lay the fish on top of the thyme, and season with salt and pepper. Drizzle generously with olive oil

  7. Bake for 15-20 minutes

  8. Remove the cooked herbs and replace with fresh thyme leaves

  9. Serve immediately

    ** Can be served with a simple salad, fennel and grapefruit, rice pilaf, roasted French green beans, zucchini noodles, etc.
